The hazelnut opening line is used to make a small opening in the surface of a whole hazelnut without damaging the kernel. Shelled hazelnuts are easier to roast, season, and package, which makes this processing method widely used in the food industry.
The capacity of hazelnut shelling production lines can be adjusted according to different configurations, ranging from 250 kg/hour to 600 kg/hour, to meet the needs of small and medium-sized hazelnut processing plants.

Basic equipment of a hazelnut opening line
A standard hazelnut shelling production line mainly consists of three core pieces of equipment.
Feed elevator
It is responsible for conveying soaked hazelnuts into the machine’s hopper, ensuring a stable flow of hazelnuts into the sheller while controlling the feeding speed to prevent machine blockage caused by uneven feeding.

Hazelnut opening machine
This is the core equipment of the entire production line, containing multiple processing channels and utilising steam-assisted shelling technology to open the hazelnuts.

Discharge conveyor
After shelling, the hazelnuts automatically fall onto the discharge conveyor belt. The conveyor belt transports the processed hazelnuts to the next processing stage.

Hazelnut soaking tank
Hazelnut shells have a porous, wood-like structure. Soaking allows water to penetrate the shell, making it easier to open without damaging the kernel.

Nut roasting machine
After shelling, hazelnuts need to be roasted after air-drying to maintain their crisp texture, an essential step in snack processing.
Taizy’s continuous roasting machine can be integrated into the entire hazelnut opening line and is suitable for roasting nuts, drying grains, and other food products.


Working principles of the hazelnut processing production line
Hazelnut shells are primarily composed of lignocellulose. Due to this porous structure, hazelnut shells can absorb moisture and react to temperature changes.
Therefore, before entering the shelling machine, hazelnuts should be soaked in warm water at approximately 50 °C for about 30 minutes for optimal results. Soaking makes the hazelnut shells more elastic and reduces their brittleness, allowing them to be opened without cracking.
During processing, the steam generator of the hazelnut shelling machine effectively transfers heat to the surface of the hazelnut shells, softening the lignin and hemicellulose components inside. Therefore, the hazelnut shells are easier to deform, preparing them for subsequent opening.
The hazelnut opener applies mechanical pressure to the hazelnuts as they pass through the extrusion plate. Because the hazelnut shells have been softened by steam, the pressure creates localised stress concentrations, resulting in controlled crack lines on the shells and a more aesthetically pleasing product.
Simultaneously, the steam intensity must be strictly controlled when using this production line to maintain a balance between shell softening and kernel protection.
- Excessive steam: The shell may become too soft, and heat may transfer to the kernel, potentially damaging it.
- Insufficient steam: The shell remains brittle, cracks will become irregular, and the damage rate will increase.
